3 boneless, skinless chicken breasts (cut into chunks)
2–3 medium zucchini (thickly sliced and quartered)
2–3 medium yellow squash (thickly sliced and quartered)
12 oz white button mushrooms (washed & quartered)
3 tbsp minced garlic
1/3 cup olive oil
1/4 – 1/3 cup soy sauce
1 1/2 tbsp rice apple vinegar
1 tbsp sesame oil
salt & pepper (to taste)
Instructions
In a large mixing bowl, combine chicken, zucchini, yellow squash, mushrooms, garlic, olive oil, soy sauce, rice apple vinegar, sesame oil, salt, and pepper. Mix until well combined.
Transfer the mixture to the air fryer basket in an even layer.
Set the air fryer to cook at 375°F (190°C) for about 15 minutes or until the chicken is cooked through and vegetables are tender.
Carefully remove from the air fryer and serve hot with steamed rice or your favorite side dish.
