  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 2 cups peeled, diced apples
  • ½ cup brown sugar
  • ½ cup flour
  • 1 tsp cinnamon
  • ¼ cup cold butter, cubed
  • 1 apple, peeled and finely diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ cup water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and sour cream/yogurt.
  4. Gradually combine dry ingredients with the wet mixture and fold in diced apples.
  5. Pour batter into the prepared pan and prepare the crumb topping by mixing brown sugar, flour, cinnamon, and cold butter until crumbly; sprinkle over the batter.
  6. Bake for 40–45 minutes or until a toothpick comes out clean. Let cool before serving with the cinnamon apple drizzle made by simmering diced apple, butter, brown sugar, cinnamon, and water until thickened.
