  • 5 medium/large apples (Granny Smith & Macoun)
  • 3 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1/41/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • Homemade pie crust or biscuit dough

Instructions

  1. Prepare the apples by peeling, coring, and chopping them into small cubes. In a bowl, combine the apples with lemon juice, brown sugar, granulated sugar (to taste), cornstarch, cinnamon, and nutmeg until well-coated.
  2. If making from scratch, prepare your pie crust or biscuit dough and roll it out to about 1/8 inch thick.
  3. Cut the dough into circles and place a spoonful of apple filling on one half of each circle. Fold over and seal edges tightly using a fork.
  4. Heat oil in a pan over medium heat. Fry the hand pies in batches until golden brown on both sides (about 2-3 minutes per side). Drain on paper towels.
