  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar (divided)
  • 1 tsp salt
  • 600 ml milk (any type, including lactose-free)
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat the oven to 180°C (350°F). Peel and slice the apples, tossing them with 150 g sugar and salt; set aside.
  2. In a saucepan, whisk together 150 g sugar and 1 tbsp cornstarch. Gradually add milk, heating until simmering.
  3. In a bowl, mix egg yolks, remaining cornstarch, and salt. Temper the egg mixture with hot milk before returning everything to the saucepan; cook until thickened.
  4. Layer half of the apples in a baking dish, pour half of the custard over them, repeat layers.
  5. Cover with foil and bake for about 60 minutes; remove foil and bake for another 20 minutes until golden brown.
