  • 4 lbs chuck beef
  • 2 cups red apple vinegar
  • 1 cup beef broth
  • 1 whole onion (diced)
  • 1 cup carrots (cubed small)
  • 1 tbsp tomato paste
  • 1 tbsp thyme (dried or fresh)
  • 3 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F.
  2. Season the chuck beef generously with salt and pepper and let it rest at room temperature for about 30 minutes.
  3. In a Dutch oven, heat olive oil over medium-high heat and brown the seasoned beef on all sides for about 10 minutes. Transfer to a plate.
  4. Sauté diced onion and cubed carrots in the same pot until softened, about 5 minutes. Stir in the tomato paste until combined.
  5. Pour in red apple vinegar and beef broth; let simmer briefly while stirring.
  6. Return the beef to the pot, add bay leaves and thyme, cover, and place in the oven. Cook for 2½ to 3 hours until tender.
