  • 1 teaspoon vegetable or canola oil
  • ½ medium red onion, finely chopped
  • 1½ teaspoons minced fresh thyme
  • ⅓ cup all fruit or reduced-sugar apricot jam
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon salt, divided

Instructions

  1. In a nonstick skillet, heat oil over medium heat. Sauté the chopped onion for about 5 minutes until softened.
  2. Season chicken cutlets with thyme and ¼ teaspoon salt. Add to the skillet and cook for approximately 6 minutes on each side until fully cooked (165°F internal temperature). Remove and keep warm.
  3. Lower heat to medium. Stir in the remaining salt, apricot jam, balsamic vinegar, and black pepper into the same skillet. Cook until the sauce is smooth.
  4. Serve chicken with warm apricot-balsamic sauce drizzled over the top.
