  • 1 cup long-grain white rice (rinsed)
  • 2 cups chicken or vegetable broth
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 medium tomato (diced)
  • 1/4 cup tomato sauce
  • 1/2 cup frozen peas (optional)
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a medium saucepan, heat the vegetable oil over medium heat. Sauté the chopped onion until translucent (3–4 minutes). Add minced garlic and cook for another minute.
  2. Stir in the rinsed rice and toast for about 2–3 minutes until lightly browned.
  3. Combine diced tomato and tomato sauce with the rice, then pour in broth and add salt to taste. Bring to a boil.
  4. Once boiling, reduce heat to low, cover, and simmer for 15–20 minutes until liquid is absorbed and rice is tender.
  5. If using peas, stir them in during the last 5 minutes of cooking. Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork. Serve hot with fresh cilantro and lime wedges.
