  • 12 oz Brussels sprouts
  • 8 oz bow tie pasta
  • 12 oz cooked smoked sausage (e.g., cajun or andouille)
  • 5 cloves garlic (minced)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1/4 teaspoon smoked paprika (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss butternut squash cubes in 1 tablespoon olive oil with salt and pepper; spread on a baking sheet.
  3. Halve Brussels sprouts, toss in 2 tablespoons olive oil with salt and pepper; add to the baking sheet.
  4. Roast vegetables for 25-30 minutes until tender and caramelized.
  5. Boil salted water in a large pot; cook bow tie pasta until al dente. Drain and reserve half a cup of pasta water.
  6. In a skillet over medium heat, sauté minced garlic until fragrant. Add sliced sausage to heat through.
  7. Stir in roasted vegetables and pasta; add reserved pasta water as needed for consistency.
  8. Finish with butter, smoked paprika, salt, and pepper to taste.
