  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 block of feta cheese (200g)
  • 1 head of garlic
  • Juice from 1 lemon
  • 1 tbsp honey
  • Fresh basil

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the baking potatoes. Par-boil in water for 6-8 minutes, then drain.
  3. In a baking dish, combine par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper.
  4. Wrap the garlic head in aluminum foil and add it to the dish.
  5. Roast for 30-40 minutes until golden brown.
  6. Remove garlic; place feta in the center of the dish and squeeze half a lemon over it. Roast for an additional 15 minutes.
  7. Squeeze roasted garlic into the potatoes along with remaining lemon juice and fresh basil; mix gently.
  8. Drizzle with honey and serve warm.
