Baked Zaatar Yogurt Chicken is a delightful dish that combines juicy chicken with the aromatic flavors of a za’atar-spiced yogurt marinade.   • 2 lbs boneless chicken thighs or breasts
  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 3 tbsp lemon juice and zest
  • 2 cloves garlic (crushed)
  • 2 tbsp zaatar seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. In a mixing bowl, whisk together Greek yogurt, olive oil, lemon juice and zest, garlic, zaatar seasoning, salt, and pepper until well combined.
  3. Place chicken in a plastic food storage bag or container and pour the marinade over it. Seal and refrigerate for at least 30 minutes or overnight for deeper flavor.
  4. Coat a baking dish with cooking spray or olive oil. Remove excess marinade from chicken and arrange in the dish.
  5. Bake uncovered for about 45 minutes, until golden brown and the internal temperature reaches 165°F.
  6. Garnish with chopped parsley before serving.
