  • 1 large onion
  • 4 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tbsp curry powder
  • 1 can full-fat coconut milk
  • 1 cup beef broth

Instructions

  1. Prepare all ingredients by chopping the onion, mincing the garlic, grating the ginger, and cutting the beef into chunks.
  2. In a large pot or Dutch oven, heat oil over medium heat. Sauté onion until translucent, then add garlic and ginger for 2 minutes.
  3. Stir in curry powder, cumin, turmeric, cayenne pepper (if using), smoked paprika, and ground coriander; cook for 1-2 minutes.
  4. Add the beef chunks and season with salt and black pepper, browning on all sides.
  5. Pour in coconut milk and beef broth; stir well to combine.
  6. Bring to a gentle boil, then reduce heat to low and cover. Simmer for at least 2 hours until beef is tender.
  7. Serve hot over rice or with naan.
