1 large onion
4 cloves garlic
1 tbsp fresh ginger
2 tbsp curry powder
1 can full-fat coconut milk
1 cup beef broth
Instructions
Prepare all ingredients by chopping the onion, mincing the garlic, grating the ginger, and cutting the beef into chunks.
In a large pot or Dutch oven, heat oil over medium heat. Sauté onion until translucent, then add garlic and ginger for 2 minutes.
Stir in curry powder, cumin, turmeric, cayenne pepper (if using), smoked paprika, and ground coriander; cook for 1-2 minutes.
