  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, mix together pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth. Gradually add dry ingredients until just combined.
  4. In another bowl, beat the cream cheese until smooth; mix in sugar, egg yolk, and vanilla extract.
  5. Fill muffin cups 3/4 full with batter and add a tablespoon of cream cheese mixture on top; swirl gently with a toothpick.
