  • 2/3 cup cold butter, cubed
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese, softened
  • ½ cup + 2 Tablespoons caster sugar
  • 2 Tablespoons corn starch
  • 1 and 2/3 cups blueberries
  • ½ cup powdered sugar
  • 23 teaspoons milk

Instructions

  1. Preheat the oven to 350°F and prepare a 9-inch springform pan with parchment paper.
  2. In a mixing bowl, combine flour, baking powder, salt, and sugars. Mix in cold butter until crumbly.
  3. Add eggs and vanilla; mix until just combined.
  4. Press two-thirds of the mixture into the prepared pan for the crust.
  5. For the filling, blend mascarpone, cream cheese, sugar, corn starch, and eggs until smooth.
  6. Layer half of the filling over the crust, sprinkle blueberries, add remaining filling, and top with leftover crumbs.
  7. Bake for 65-75 minutes until golden; check doneness with a toothpick.
  8. Prepare glaze by mixing powdered sugar with milk to desired consistency.
