  • 1 cup granulated sugar (divided)
  • 1 tablespoon lemon juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 3 large egg yolks

Instructions

  1. Prepare the blueberry puree by combining 1/4 cup sugar, blueberries, and lemon juice in a small saucepan over medium heat. Once boiling, mash the berries and blend until smooth. Strain to remove solids.
  2. In a medium bowl over ice, combine 1 cup heavy cream and vanilla extract.
  3. In another saucepan, heat remaining cream, milk, sugar (3/4 cup), and salt until dissolved.
  4. Whisk egg yolks and temper them with warm milk mixture before cooking until thickened with blueberry puree added.
  5. Combine with chilled cream mixture, cool completely in an ice bath, then refrigerate for at least 4-6 hours.
  6. Churn according to your ice cream maker’s instructions and freeze until solid.
