  • 16 oz sugar
  • 1.5 oz freshly squeezed lemon juice
  • 0.5 oz balsamic vinegar
  • 1/2 vanilla bean (or 1 teaspoon vanilla extract)

Instructions

  1. Rinse blueberries under cold water, removing stems. Measure out sugar, lemon juice, balsamic vinegar, and prepare vanilla bean.
  2. In a heavy-bottomed pot, combine blueberries, sugar, lemon juice, balsamic vinegar, and scraped vanilla bean. Stir gently.
  3. Heat over medium until simmering; then reduce heat slightly.
  4. Cook for about 30 minutes, stirring frequently until thickened. Test consistency on a chilled plate.
  5. Remove from heat. Discard vanilla bean if used. Ladle hot jam into sterilized jars and seal tightly.
