  • 2 ripe peaches, sliced
  • 1 cup crumbled feta cheese
  • 4 cups mixed greens
  • 1/4 cup chopped red onion
  • 1/4 cup chopped walnuts
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Rinse the blueberries under cold water and place them in a large mixing bowl.
  2. Wash the peaches and slice them into wedges or thin slices; add them to the bowl.
  3. Crumble feta cheese over the fruits in the bowl.
  4. Add washed and dried mixed greens along with chopped red onion.
  5. Roughly chop walnuts and scatter over the top of the salad.
  6. In a separate bowl, whisk together honey, balsamic vinegar, olive oil, black pepper, and salt to make the dressing.
  7. Drizzle the dressing over the salad and toss gently using salad tongs or two large spoons until well combined.
