  • 1 1/4 cups buttermilk, room temperature
  • 1/2 cup vegetable or canola oil
  • 2 tsp vanilla extract or vanilla bean paste
  • 1 tsp white vinegar
  • 1 tsp red gel food coloring
  • 1 1/2 cups unsalted butter, room temperature
  • 1 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract or vanilla bean paste
  • 1 tsp fine salt
  • 7 cups powdered sugar
  • 3 Tbsp heavy whipping cream, room temperature
  • Small squirt of red gel food coloring
  • 1/2 cup seedless raspberry jam
  • 3 Tbsp water

Instructions

  1. Preheat oven to 350°F (175°C) and prepare cake pans by greasing and dusting with flour.
  2. In a mixing bowl, combine the cake flour, cocoa powder, baking soda, and salt. In another bowl, cream together the butter and sugar until light and fluffy, then add eggs one by one while mixing.
  3. Gradually mix in the buttermilk, oil, vanilla extract, vinegar, and red gel food coloring until fully combined.
  4. Pour the batter evenly into prepared pans and bake for about 27 minutes or until a toothpick inserted comes out clean. Let cool in pans for about 10 minutes before transferring to cooling racks.
  5. In a stand mixer, beat together softened butter and cream cheese until creamy. Gradually add powdered sugar while mixing on low speed to avoid mess, then mix in heavy whipping cream and adjust color with red gel food coloring as needed.
  6. Once cakes are completely cooled, level each layer if necessary, spread raspberry jam followed by a layer of frosting between each layer. Decorate the cake using frosting techniques to create a brain-like appearance.
