  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries, hulled and quartered
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Prepare the dough by combining cold butter with flour and salt until crumbly. Add water and vinegar gradually until a dough forms. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  2. In a saucepan, melt half of the cold butter over medium heat until golden brown; let cool slightly before adding to the dough mixture.
  3. Roll out the chilled dough to fit your pie dish and transfer it carefully.
  4. In a bowl, mix sliced peaches and strawberries with sugar, cornstarch, lemon juice, and toss gently.
  5. Pour the fruit mixture into the prepared crust and sprinkle Turbinado sugar if desired.
  6. Bake in a preheated oven at 375°F (190°C) for about 70 minutes or until bubbly and golden brown.
