  • 12 ounces Rigatoni pasta
  • 1 1/22 cups diced heirloom tomatoes
  • 1 cup mozzarella balls (fresh)
  • 1/4 cup chiffonade basil
  • 1/2 cup olive oil
  • 1/2 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 tsp salt

Instructions

  1. Prepare the dressing by mixing olive oil with parsley, garlic powder, red pepper flakes, oregano, black pepper, and salt in a small bowl.
  2. Cook the rigatoni according to package directions in a large pot of salted boiling water until al dente. Drain and set aside.
  3. In a mixing bowl, toss the warm pasta with the dressing until well coated. Allow to cool slightly.
  4. Add diced heirloom tomatoes, mozzarella balls, and chiffonade basil to the bowl. Gently stir until well combined.
  5. Serve immediately or chill for 30 minutes before serving for enhanced flavor.
