  • 3/4 cup shredded coconut
  • 4 1/2 cups bread flour
  • 3/4 cup salted butter (almost melted)
  • 1 1/2 cups packed brown sugar
  • 3 tablespoons cinnamon
  • 1/2 cup heavy cream
  • 6 ounces cream cheese (softened)
  • 1/3 cup salted butter (softened)
  • 2 cups powdered sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. In a stand mixer, combine warm milk and instant yeast; let sit briefly.
  2. Add eggs, melted butter, salt, cinnamon, and sugar; mix well.
  3. Stir in shredded carrots and coconut followed by 4 cups of flour until just combined; let rest for 5 minutes.
  4. Switch to the dough hook and knead for 5-7 minutes until smooth; add more flour if necessary.
  5. Transfer dough to a greased bowl, cover, and let rise until doubled in size (about 30 minutes).
  6. Mix together filling ingredients: softened butter, brown sugar, and cinnamon.
  7. Roll out risen dough into a rectangle; spread filling evenly and roll tightly into a log.
  8. Slice into 12-15 pieces; place in greased baking pan and let rise for another 20 minutes.
  9. Pour warmed heavy cream over risen rolls before baking at 350ºF for 27-30 minutes until golden brown.
  10. Allow to cool slightly before frosting with cream cheese mixture.
