  • 1 package (9 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion for about 3-4 minutes until translucent, then add garlic and cook for another minute.
  2. Add ground beef to the skillet, breaking it apart as it cooks until browned (about 5-7 minutes). Drain excess fat if necessary.
  3. Stir in black beans, diced tomatoes, and taco seasoning. Simmer for about 5 minutes; season with salt and pepper.
  4. Boil salted water in a large pot and cook cheese tortellini according to package instructions (3-5 minutes).
  5. Preheat oven to 350°F (175°C). Combine cooked tortellini with the beef mixture in a mixing bowl.
  6. Spread enchilada sauce on the bottom of a baking dish. Layer the tortellini mixture evenly, top with remaining enchilada sauce and shredded cheese.
  7. Cover with foil and bake for 20 minutes, then remove foil and bake an additional 10-15 minutes until cheese is melted.
