  • 6 large roasted green chiles, peeled and seeded
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 5 large eggs
  • 1/2 cup whole milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or butter for greasing the dish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a mixing bowl, whisk together eggs, milk, flour, baking powder, salt, and pepper until smooth.
  3. Layer half of the roasted green chiles in the baking dish followed by half of the shredded cheeses. Repeat with remaining chiles and cheese.
  4. Pour the egg mixture evenly over the layers.
  5. Bake uncovered for 30–35 minutes until golden brown and set in the center.
