  • 22 1/2 lbs. skin-on chicken thighs
  • 1/2 cup fresh lime juice
  • 3 teaspoons fresh lime zest
  • 1/4 cup olive oil
  • 4 tablespoons fresh cilantro (chopped)
  • 2 jalapeños (finely chopped)
  • 4 cloves garlic (minced)
  • 1 tablespoon honey
  • 2 teaspoons salt
  • 1 teaspoon chili powder (or to taste)

Instructions

  1. Rinse the chicken thighs under cold water, remove bones while keeping the skin on, and pat dry.
  2. In a large bowl, whisk together lime juice, lime zest, olive oil, cilantro, jalapeño, garlic, honey, salt, and chili powder until combined.
  3. Add chicken to the marinade and stir gently to coat evenly. Cover and refrigerate for at least 2 hours.
