  • 1 lb. (500g) shrimp (peeled and deveined, tail-on)
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon fresh cilantro leaves (or parsley leaves, chopped finely)
  • 2 tablespoons Thai sweet chili sauce
  • 2 cloves garlic (chopped finely)
  • 1/2 tablespoon honey
  • 1 pinch salt

Instructions

  1. Soak bamboo skewers in cold water for about 10-15 minutes.
  2. Rinse shrimp under cold water and pat dry with paper towels.
  3. In a mixing bowl, whisk together lime juice, olive oil, cilantro or parsley, Thai sweet chili sauce, garlic, honey, and salt.
  4. Add shrimp to the marinade and toss until evenly coated; let marinate for at least 30 minutes.
  5. Preheat grill to medium-high heat or oven to 400°F (200°C).
  6. Thread marinated shrimp onto soaked skewers.
  7. Grill or bake for about 5-7 minutes per side until shrimp are fully cooked and slightly charred.
