  • 1 lb ground beef (80% lean)
  • 2 cups uncooked macaroni
  • 1 small onion (diced)
  • ½ cup bell pepper (diced)
  • 3 cloves garlic (diced)
  • 1 packet chili seasoning mix
  • 8 oz tomato sauce
  • 14.5 oz can diced tomatoes (undrained)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup chicken broth (or beef broth)

Instructions

  1. In a large skillet over medium heat, brown the ground beef. Add onion, bell pepper, and garlic; sauté until tender.
  2. Stir in chili seasoning, tomato paste, tomato sauce, diced tomatoes, broth, and kidney beans. Simmer for about 10 minutes.
  3. Cook macaroni according to package instructions; drain.
  4. In a separate saucepan, melt butter and whisk in flour to form a roux. Gradually add heavy cream and milk until smooth; season with mustard powder, onion powder, salt, pepper, and hot sauce.
  5. Combine cooked macaroni with the chili mixture and half of the cheese.
  6. If desired, transfer to a baking dish, top with remaining cheese, and bake at 350°F for about 20 minutes until bubbly.
