20 Oreo cookies
3 tablespoons melted unsalted butter
8 ounces chopped semisweet chocolate
1 cup heavy cream (divided)
1/2 cup homemade salted caramel sauce
1/2 cup smooth peanut butter
2 tablespoons confectioners' sugar
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Crush Oreo cookies in a food processor until fine crumbs form. Mix with melted butter and press into a 9-inch pie dish. Bake for 10 minutes; cool completely.
Melt chocolate over simmering water or in the microwave; let cool slightly. Whip 1 cup heavy cream until stiff peaks form. Fold in cooled chocolate and salted caramel sauce.
Pour mousse into cooled crust; refrigerate for at least 30 minutes to set.
For the whipped cream, whip remaining heavy cream, peanut butter, confectioners' sugar, and vanilla until soft peaks form. Spread over the mousse.
Drizzle with additional caramel, melted peanut butter, and melted chocolate before serving.
