  • 1 cup vegetable oil or melted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two loaf pans or one bundt pan.
  2. In a large bowl, whisk together vegetable oil (or melted butter), granulated sugar, eggs, vanilla extract, and buttermilk until smooth.
  3. In another bowl, combine all-purpose flour, ground cinnamon, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture and mix gently until just combined. Fold in chopped pecans.
  5. Pour the batter into the prepared pan(s) and bake for 45-55 minutes for loaves or 55-65 minutes for a bundt cake. A toothpick inserted into the center should come out clean.
  6. Let cool in the pan for about 10-15 minutes before transferring to a wire rack.
