  • ⅓ cup granulated sugar
  • 2 teaspoons instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 teaspoon instant coffee granules
  • 1 large egg (room temperature)
  • ½ teaspoon vanilla extract
  • Tangzhong (from recipe above)
  • 4 tablespoons unsalted butter (room temperature)
  • 5 tablespoons unsalted butter (room temperature)
  • ⅔ cup dark brown sugar (or light brown sugar)
  • 2 teaspoons ground cinnamon
  • 1 ½ teaspoons instant coffee granules
  • 2 ounces cream cheese (softened)
  • 4 tablespoons unsalted butter (softened)
  • 1 cup powdered sugar
  • 4 tablespoons heavy cream
  • ¾ teaspoon instant coffee granules

Instructions

  1. Prepare the tangzhong by whisking together water and flour in a saucepan over medium heat until it forms a paste. Set aside.
  2. In a mixing bowl, combine flour, sugar, yeast, and salt. In another bowl, mix warm milk with instant coffee until dissolved.
  3. Add the egg, milk mixture, vanilla extract, and tangzhong to the dry ingredients. Knead until you form a shaggy dough.
  4. Gradually incorporate softened butter while kneading until smooth and elastic.
  5. Let the dough rise in a greased bowl covered with plastic wrap until doubled in size (about 45–60 minutes).
  6. Prepare the filling by mixing softened butter with brown sugar, cinnamon, and instant coffee.
  7. Roll out the dough into a rectangle, spread the filling evenly, then cut into strips and roll each strip tightly.
  8. Place in a baking pan and let rise again before baking at 325°F (163°C) for 20–23 minutes until golden brown.
  9. For frosting, mix softened cream cheese and butter with powdered sugar, heavy cream, and instant coffee until smooth.
  10. Frost cooled rolls generously before serving.
