  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 Tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • ¾ cup chopped Oreo cookies
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream, or store-bought whipped topping
  • additional chopped Oreo cookies, to garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Beat the softened butter and sugar until light and fluffy; add vanilla.
  3. Mix dry ingredients (cake flour, baking powder, salt) separately, then combine with wet ingredients, adding milk gradually. Fold in chopped Oreo cookies.
  4. Distribute batter evenly into prepared pans and bake for approximately 30 minutes or until a toothpick comes out clean. Cool completely on wire racks.
  5. Assemble by layering one cake on a serving plate, spreading half of the softened ice cream on top, followed by the second cake layer, then remaining ice cream.
  6. Top with whipped cream and garnish with extra chopped Oreo cookies; freeze for at least 4 hours before serving.
