  • 1½ cups cherry tomatoes (halved)
  • ½ cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • 3 tablespoons olive oil (divided)
  • 1 tablespoon lime juice
  • ¼ teaspoon salt

Instructions

  1. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt until combined. Set aside.
  2. Heat remaining 1 tablespoon olive oil in a skillet over medium heat. Add corn and sauté until tender, about 5 minutes.
  3. Pour the cooked corn into a large mixing bowl and allow it to cool slightly.
  4. Add halved cherry tomatoes, finely chopped cucumber, and minced basil to the bowl.
