  • 1 pound Roma tomatoes (seeded and diced)
  • 1/2 cup diced red onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 15 ounce can black-eyed peas (rinsed and drained)
  • 15 ounce can black beans (rinsed and drained)
  • 1 cup frozen sweet corn (thawed)
  • 1/2 cup olive oil
  • 2 tablespoons granulated sugar
  • 1/3 cup white vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • Chopped parsley for topping (optional)

Instructions

  1. In a large mixing bowl, combine the diced tomatoes, red onion, green bell pepper, red bell pepper, black-eyed peas, black beans, and sweet corn.
  2. In a separate bowl, whisk together olive oil, granulated sugar, white vinegar, chili powder, and kosher salt until well blended.
  3. Pour the dressing over the vegetable mixture and toss to coat evenly.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 3–4 hours to allow flavors to meld. Cowboy Caviar can also be served at room temperature if desired.
