  • 23 tablespoons olive oil
  • 1 medium onion (diced)
  • 4 cloves garlic (mashed)
  • 1 1/2 cups arborio rice (uncooked)
  • 8 cups chicken broth or bone broth
  • 1 tsp fresh thyme leaves
  • 1 tsp dried oregano
  • 1/2 cup lemon juice + zest of 2 lemons
  • 2 eggs
  • 2 egg yolks
  • 3/4 pound cooked boneless, skinless chicken breast (shredded)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • Chopped parsley
  • Aleppo pepper
  • Fresh or dry dill

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent, then add mashed garlic and cook for an additional 2 minutes.
  2. Add uncooked arborio rice, chicken broth, thyme, and oregano to the pot. Cover and simmer on low for 20-25 minutes.
  3. Whisk together eggs, egg yolks, lemon juice, and zest in a separate bowl.
  4. Temper the egg mixture by slowly ladling hot soup into it while whisking continuously.
  5. Blend the tempered mixture until smooth, then return it to the pot.
  6. Stir in shredded chicken, salt, and pepper to taste.
  7. Serve warm, garnished with parsley and Aleppo pepper if desired.
