  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt (optional)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar for filling
  • 3 tablespoons all-purpose flour for filling

Instructions

  1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the egg, pumpkin puree, brown sugar, granulated sugar, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, and nutmeg until combined.
  3. Gently fold in the flour, baking powder, baking soda, and optional salt until just mixed. Avoid overmixing.
  4. Pour two-thirds of the batter into the prepared pan and smooth the top.
  5. In another bowl, mix the cream cheese with granulated sugar and flour until smooth.
  6. Spread the cream cheese mixture over the pumpkin batter in the pan; then add the remaining batter on top.
  7. Bake for about 48 minutes or until golden brown and set in the center. Cool in the pan for 15 minutes before transferring to a wire rack.
