  • lbs boneless, skinless chicken breasts
  • 12 oz fettuccine pasta
  • 2 tbsp olive oil
  • 1½ cups heavy cream
  • 4 oz cream cheese
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ¾ cup shredded mozzarella cheese
  • 2 tbsp chopped parsley, for garnish

Instructions

  1. Cook fettuccine: Boil in salted water until al dente. Drain and reserve ½ cup of pasta water.
  2. Sear chicken: Toss chicken with Cajun seasoning and other spices. Heat olive oil in a skillet over medium-high heat and cook chicken for 5-6 minutes until browned. Add butter and minced garlic; toss to combine.
  3. Make Alfredo sauce: In a clean skillet, melt butter and mix in cream cheese until smooth. Gradually whisk in heavy cream, then stir in cheeses until melted.
  4. Combine: Toss cooked fettuccine with Alfredo sauce until well coated. Top with warm Cajun chicken bites.
