  • 2 tablespoons unsalted butter

  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 9 oz cheese tortellini, fresh or refrigerated
  • 1 cup heavy cream
  • 4 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup reserved pasta water (if needed)
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the tortellini in boiling salted water according to package instructions. Reserve ¼ cup pasta water before draining.
  2. Season chicken with Cajun seasoning and Italian seasoning.
  3. Sear the seasoned chicken in olive oil over medium-high heat until golden brown (4-5 minutes per side). Remove and cover.
  4. In the same skillet, sauté garlic in butter until fragrant. Add heavy cream and Velveeta; stir until melted.
  5. Mix in mozzarella and Parmesan until smooth. Combine cooked tortellini into sauce.
  6. Return chicken to skillet; simmer for an additional 12 minutes.
  7. Garnish with parsley if desired, serve hot.
