  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the rotini according to package directions. Add the broccoli florets in the last 3 minutes of cooking. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté the diced chicken until golden brown.
  3. Stir in minced garlic and cook for about 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth; add Parmesan cheese, seasoning with salt and pepper. Simmer until slightly thickened.
  5. Combine drained pasta and broccoli with the creamy sauce in the skillet; toss until well-coated.
  6. Serve warm, garnished with extra Parmesan and fresh parsley if desired.
