  • 1/2 medium onion (chopped)
  • 1 (28-ounce) can crushed tomatoes
  • 1 (10-ounce) can Rotel diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 tablespoon chili powder
  • 1 (12-ounce) can corn (drained)
  • 1 (14-ounce) can black beans (drained & rinsed)
  • 2 cups cooked chicken (shredded)
  • 1 cup heavy cream

Instructions

  1. Heat the olive oil in a soup pot over medium-high heat. Add chopped onion and sauté until lightly browned (5-7 minutes).
  2. Stir in crushed tomatoes, Rotel, chicken broth, garlic powder, smoked paprika, chili powder, corn, and black beans. Mix well.
  3. Increase heat to high and bring to a boil. Then reduce heat to low, cover slightly ajar, and simmer for about 5 minutes.
  4. Prepare your desired toppings while the soup simmers.
  5. Stir in heavy cream and shredded chicken; warm through for an additional 3-5 minutes. Season with salt and pepper to taste.
