  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14 oz) can full-fat coconut milk
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder

Instructions

  1. Heat vegetable oil in a cast iron skillet over medium-high heat. Sear cubed beef until browned on all sides, then remove from the pan.
  2. In the same skillet, sauté chopped onion until translucent. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in curry powder, cumin, turmeric, and optional cayenne pepper for 30 seconds.
  4. Return the beef to the skillet along with coconut milk, chickpeas, beef broth, and tomato paste. Season with salt and pepper.
  5. Simmer on low heat for about 30 minutes or until the beef is tender.
  6. Prepare naan by mixing flour, yogurt, warm water, sugar, and baking powder until smooth. Roll into flat circles.
  7. Cook naan on a skillet over medium-high heat until golden brown on both sides.
  8. Serve curry hot with freshly baked naan and garnish with cilantro.
