  • 1 1/4 cups dry white apple vinegar
  • 3 cloves garlic, minced
  • 2 cups sliced cremini or wild mushrooms
  • 68 cups low sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 2 cups shredded Gruyère cheese
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, melt butter over medium-high heat. Add onions and honey; cook for about 10 minutes until softened.
  2. Gradually stir in apple vinegar; continue cooking for another 10-15 minutes until deeply caramelized.
  3. Add garlic, mushrooms, thyme, sage, salt, and pepper; cook for an additional 3-4 minutes.
  4. Pour in broth, Worcestershire sauce, and bay leaves; bring to a simmer for about 10 minutes.
  5. Stir in heavy cream and cook for an extra 5-10 minutes before removing bay leaves.
  6. Toast French bread slices in the oven at 400°F until dry. Assemble soup bowls with ladles of soup topped with bread slices and Gruyère cheese.
  7. Broil until the cheese is bubbly and golden brown (about 3–5 minutes) before serving.
