  • 12 oz rotini or fusilli pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Cook pasta in salted boiling water until al dente, about 8-10 minutes. Reserve ½ cup pasta water, then drain.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken seasoned with Cajun spices until golden brown and cooked through (8-10 minutes). Remove chicken.
  3. In the same skillet, melt butter and sauté minced garlic for 1 minute. Add heavy cream and bring to simmer.
  4. Stir in Velveeta until melted; then add cheddar, mozzarella, and Parmesan until the sauce is thickened. Adjust with reserved pasta water if needed.
  5. Combine cooked pasta with sauce and toss well. Serve topped with seared chicken.
