  • 1 tablespoon browning sauce (optional)
  • 2 tablespoons curry powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons garlic powder
  • 1 medium onion, diced
  • 1 large carrot, diced
  • 1 bell pepper, sliced
  • 1 scotch bonnet pepper or 1/2 teaspoon chili flakes
  • 2 potatoes, diced
  • 2 cups chicken stock
  • 1 cup coconut milk
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Marinate chicken thighs with browning sauce, curry powder, garlic powder, smoked paprika, salt, and pepper for at least 30 minutes.
  2. In a skillet, heat olive oil over medium heat and sauté the diced onions, bell peppers, and carrots until softened.
