  • 1/2 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh chives

Instructions

  1. Cook twisted pasta according to package instructions until al dente; drain and set aside.
  2. In a large bowl, toss chicken cubes with olive oil, Cajun seasoning, and paprika until evenly coated.
  3. Heat a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, or until fragrant.
  5. Whisk in the flour and cook for 1-2 minutes, stirring constantly until a smooth paste forms.
  6. Gradually whisk in the milk and heavy cream until smooth. Bring to a simmer while stirring occasionally.
  7. Reduce heat to low and simmer for 5-7 minutes or until the sauce has thickened slightly.
  8. Stir in 1 cup of mozzarella cheese and Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  9. Add the cooked pasta and chicken to the sauce; toss to coat evenly.
  10. Transfer the pasta to a serving dish. Top with remaining 1/2 cup of mozzarella cheese.
  11. Broil in the oven for 2-3 minutes or until cheese is melted and bubbly.
