  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup grated Parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)

Instructions

  1. Preheat the oven to 425°F.
  2. Butter a baking dish and set aside.
  3. Salt the zucchini slices and let them rest for 15 minutes, then wipe off excess salt.
  4. Arrange the zucchini in an even layer in the baking dish.
  5. In a bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and ½ cup Parmesan cheese.
  6. Melt butter in a saucepan over medium heat; cook garlic until fragrant.
  7. Add the cream mixture to the saucepan, whisking until it bubbles; stir in ½ cup mozzarella cheese until melted.
  8. Pour the sauce over the zucchini and sprinkle remaining cheeses on top.
  9. Bake for 18 to 22 minutes until golden brown.
  10. Let stand for 5–10 minutes before serving.
