  • 2 medium carrots
  • 14 oz young potatoes
  • 1 tablespoon butter
  • 79 oz heavy cream
  • 1/3 cup hard cheese (grated)
  • 3235 oz stock (vegetable or meat-based)
  • 1 large bunch fresh dill
  • 1 tablespoon lemon juice
  • Salt and black pepper

Instructions

  1. Peel and dice the onion and carrots; cube the potatoes.
  2. Melt butter in a pot over medium-low heat; sauté the onion until translucent.
  3. Add potatoes and carrots; cook for another 2-3 minutes.
  4. Pour in stock to cover vegetables; bring to a near-boil, then simmer for about 20 minutes until softened.
  5. Blend one cup of soup with heavy cream until smooth; return to the pot.
  6. Stir in chopped dill, lemon juice, nutmeg, salt, and pepper; cook for another 3-4 minutes.
  7. Serve hot, garnished with additional dill and cheese flakes.
