  • 1214 cloves garlic
  • 500 g potatoes
  • 250350 ml vegetable broth
  • 60 ml soy or oat cream
  • Olive oil
  • Nutritional yeast
  • Sea salt
  • Black pepper

Instructions

  1. Preheat oven to 200°C (400°F). Place peeled garlic on a baking sheet, drizzle with olive oil, and sprinkle with sea salt. Roast for 15-20 minutes until golden brown.
  2. While roasting, peel and cube potatoes. Boil in a large pot with enough water to cover until tender.
  3. Drain excess water from the potatoes. Blend in roasted garlic, vegetable broth, soy/oat cream, nutritional yeast, and seasonings until smooth.
  4. For croutons, cube day-old bread, sauté in olive oil with black pepper until golden brown.
  5. Serve hot topped with croutons and enjoy!
