  • 2 medium zucchinis (about 2 cups shredded)
  • ½ teaspoon salt
  • 1 large egg
  • ¼ cup all-purpose flour
  • ¼ cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • ¼ teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Grate the zucchinis using a box grater and place them in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
  2. Squeeze out excess liquid using a clean kitchen towel.
