  • 1/2 teaspoon cayenne pepper
  • 1 can (28 ounce) crushed fire roasted tomatoes
  • 1 can (8 ounce) tomato paste
  • 1 can (4 ounce) diced green chilies
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 2 bay leaves
  • Salt to taste
  • 23 cups chicken or beef broth
  • 6 ounces cream cheese, at room temperature
  • 2 cups shredded cheddar cheese
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt, for serving

Instructions

  1. Prepare by chopping onions and poblano peppers; measure spices.
  2. Brown the ground beef in a skillet, then add it to the slow cooker.
  3. Combine all ingredients in the slow cooker: onions, peppers, spices, tomatoes, paste, hot sauce, butter, bay leaves, salt, and broth.
  4. Cook on low for 4-6 hours or high for 2-3 hours.
  5. Stir in cream cheese and cheddar cheese 30 minutes before serving.
  6. Serve hot with garnishes like mixed chili beans, cilantro, green onions, avocado slices, or Greek yogurt.
