  • 16 tablespoons cold unsalted butter
  • 6 tablespoons very cold water
  • 3 pints fresh blueberries
  • 1 cup + 1 tablespoon sugar
  • ½ cup flour
  • Zest and juice from 2 limes

Instructions

  1. To make the pie dough, combine flour, sugar, and salt in a stand mixer bowl. Add cold butter and mix until crumbly. Gradually add cold water until the dough forms.
  2. Chill the dough wrapped in plastic wrap for at least one hour.
  3. Preheat your oven to 375°F. Roll out half of the dough for the bottom crust and fit it into a pie plate.
  4. In a bowl, mix blueberries, sugar, flour, lime zest, and juice. Pour into the crust and cover with the top crust.
  5. Seal edges, cut slits for ventilation, and brush with an egg wash before baking for about one hour until golden brown.
