  • 2 tablespoons canola oil
  • Zest and juice of 1 large lime
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 clove garlic (chopped)
  • 1 jalapeño (chopped)
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large red onion

Instructions

  1. Cut the chicken into bite-sized pieces and place in a zip-top bag.
  2. In a bowl, mix canola oil, lime juice, zest, chili powder, cumin, garlic, jalapeño, and salt. Pour over chicken and marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat. Soak wooden skewers in water if using.
  4. Chop bell peppers and onion into chunks. Thread marinated chicken and vegetables onto skewers alternately.
  5. Grill kebabs for about 6-8 minutes until the chicken is fully cooked, turning occasionally.
