  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 lb mushrooms, quartered
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • Bouquet garni (thyme, bay leaves, parsley)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Season beef with salt and pepper and brown in batches until well-seared on all sides. Remove beef and set aside.
  2. In the same pot, add onion, carrots, and garlic. Sauté until the onion is translucent.
  3. Sprinkle flour over the vegetables; stir to coat evenly while scraping up bits from the bottom.
  4. Return beef to the pot along with juices. Stir in tomato paste and bouquet garni. Bring to a boil then reduce heat to simmer for about 2 hours.
  5. In a separate pan, sauté mushrooms in oil until golden brown; add them to the stew for the last 30 minutes of cooking.
